Lemon Ginger Mango

Your family will never guess that this warm, sweet mango dessert provides them with healthy amounts of vitamins A and C, along with some vitamin E.

Ingredients:

1 large mango, seeded, peeled and chopped (1 cup)
2 teaspoons finely chopped crystallized ginger
2 teaspoons lemon juice
1/4 teaspoon ground cinnamon
2 tablespoons flaked coconut
1 tablespoon chopped almonds

Instructions:

  1. Preheat oven to 425° F.
  2. In a medium bowl toss together mango, ginger, lemon juice and cinnamon. Spoon into two (6-ounce) ramekins or custard cups. Sprinkle coconut and almonds over top. Place in a shallow baking pan.
  3. Bake for 5 to 7 minutes or until coconut begins to brown. Serve warm.
