Citrus Salsa and Corn Chips

Fresh grapefruit and oranges mix with tomato and cucumber in this vitamin-packed appetizer. If grapefruit interferes with any of your medications, substitute extra orange segments for the grapefruit.

Ingredients:

1/2 cup coarsely chopped grapefruit sections
1/2 cup coarsely chopped orange sections
1/2 cup seeded and chopped tomato
1/2 cup coarsely chopped cucumber
2 tablespoons sliced green onion
2 tablespoons seeded and finely chopped fresh jalapeño pepper
1 tablespoon frozen orange juice concentrate, thawed
2 1/2 cups baked tortilla chips (about 32 chips)

Instructions:

  1. In medium bowl toss together grapefruit sections, orange sections, tomato, cucumber, green onion, jalapeño pepper and orange juice concentrate.
  2. Transfer to serving bowl. Serve with tortilla chips.
